Lake-to-Table: Berryessa King Salmon
Alex and the Catch Happy crew brought a fresh Lake Berryessa king salmon straight to the dinner table — and trust us, this one’s worth trying at home!
How We Cooked It:
Ingredients: Fresh minced garlic, salt, fresh rosemary, black pepper, Cajun seasoning, lemon.
Prep: Filet the salmon, remove skin & bones. Rub with oil, season with salt, garlic, Cajun spice, black pepper, and a squeeze of fresh lemon juice.
Cook: Sear gently in a skillet until cooked through and flaky.
How It Tastes: No muddy “lake” flavor here — just clean, tender salmon with a mild kick from Cajun spice, bright lemon zest, and fragrant rosemary. Soft, buttery texture and kid-approved!
Pro tip: Save the carcass for fish stock or soup — nothing goes to waste.
